3 hour "diet"

Okay, here I go. So I started the 3 hour diet eating plan yesterday, and so far I've LOVED everything I've made. I love his cookbook and I think it was a great investment. Plus, he has four different eating plans you can follow: meat lover, carb lover, veggie lover, and healthy heart. Well, I'm a carb lover, so any "diet" that cuts out carbs I'll stick to for about one meal and then its over. And it has plenty of yummy stuff in it that I love, like cheese :)

This morning I had the Breakfast Banana Split. It sounds kind of weird, but I assure you, I was literally licking the plate (I'm not kidding)

(for one serving)
1 cup nonfat vanilla yogurt
1/2 teaspoon flaxseed oil
1 small, ripe banana
1 Tbsp peanut butter
1 1/2 Tbsp wheat germ
1 6-ounce glass skim milk

1. Mix together the yogurt and the flaxseed oil in a bowl

2. Split the banana in half lengthwise and spread with peanut butter

3. Top with the yogurt mixture and sprinkle wheat germ

4. Eat up with a glass of cold milk

It was seriously soooo good!

I also made super easy tortilla pizzas for lunch today, and they were a hit:

(4 servings)

Four 6-inch flour tortillas
1 cup prepared pizza sauce (I couldn't find any, so I used tomato sauce and then added Emerils Garlic and Parmesan seasoning. YUM! and 0 calories, too)
4 ounces shredded low fat cheddar cheese (1/2 cup)
4 ounces shredded part skim mozerella cheese (1/2 cup)
4 ounces shredded low fat swiss cheese (1/2 cup)  -(I couldn't find shredded low fat swiss cheese, so I just used a whole cup of the mozerella)
4 cups mixed salad greens
1 1/2 cup fat-free salad dressing (wishbone salad spritzers Italian is really good)

1. Preheat the oven 350 F. Line a baking sheet with aluminum foil.

2. Place the tortillas on the baking sheet and spread with the pizza sauce and top with the cheeses.

3. Bake until the cheese just melts and the tortillas are crisp, 6-8 minutes

4. Meanwhile, toss the salad greens with the dressing and divide between four plates

5. Serve each person a pizza and a salad

tonight I'm making Spinach and Turkey Lasagna. I'll let you know how it turns out!
